Oveja Negra Winemaker's Selection Cabernet Syrah 

Via's definition of Black Sheep is someone special and out of the ordinary, someone who attracts attention, who captivates, and has character and personality. Step forward: Oveja Negra! Via's first harvest was as recent as 2002 from a new winery at Talca and this is very definitely a "Can Do" operation producing wines with attitude. Winemaker Edgard Carter seeks to combine sustainable viticultural practices with innovative winemaking, to produce fruit-driven wines of real character. "Sustainability, expression of terroir, and quality are key. The aim is to deliver wines with superior quality, at fair prices, made in harmony with nature". Individual wines for individual people.

Vinification
The grapes were destemmed but not crushed to minimize berry break age before entering the stainless steel tanks, where they were cold macerated for 3 days at 8-10C (46-50F). Alcoholic fermentation lasted approximately 18 to 20 days, and the temperature fluctuated between 27 and 29C (81-84F), with 4-6 pumpovers per day, moving 50% of the tank volume as determined by the winemaker's tastings. Following alcoholic and malolactic fermentation, 40% of the blend was aged in oak barrels (60% French and 40% American) for 8-10 months.

Viticulture
The Cabernet Sauvignon and Syrah vines come from our La Esperanza vineyard. They were planted 9 years ago and are vertically positioned. The Cabernet Sauvignon is planted at a density of 1.2 x 2.2 m and the Syrah at 1.5 x 2.2 m. Canopy management.

Tasting Note
Juicy and well-balanced with plenty of fruit flavour leading to notes of spice and a soft touch of caramel. With firm, ripe tannins, this wine has a pleasingly persistent finish.
