If your idea of a perfect white wine is the grassy, passionfruit-strewn, teeth-bracing bombshell that is a Marlborough Sauvignon Blanc, then you should steer clear of this example from Limsore Estate. This wine is a bombshell in a different way - texturally and eye-openingly. The barrel ferment lends the wine a nutty creaminess reminiscent of white Graves, with ripe peach and hazelnut notes on the palate. The characteristic acidity of Sauvignon Blanc is still present however (thanks to the cool climate of the Greyton ward), but is far from dominant, merely underscoring the complexity and fullness of the wine into a long and seamless finish. This is masterful Sauvignon Blanc - a must try for the increasingly jaded - and would be perfect with a creamy blue cheese and wild mushroom risotto.

In the winery, the grapes were barrel fermented and then aged in older French oak barriques for a period of 11 months, with occasional battonage helping to lend the wine a fullness in the mouth. No animal-based fining agents or winery aids were used during the vinification.
