One of the pioneers of the modern Greek wine revolution Gaia Estate was established in 1994 by Greek winemakers Leon Karatsalos and Yiannis Paraskevopoulos. Operating two different wineries they make cutting edge wines in both Nemea and Santorini.
Selected grapes are destemed and crushed. Fermentation (approx. 12 days at 28C). Malolactic fermentation was not undertaken. Two rackings for clarification.Maturation for 45 days in new 225 lit French oak casks (Nevers & Allier) with medium-plus toasting.
NOTIOS blends hints of gooseberry and a discreet aroma of oak, creating a soft fruity flavour that underscores its rich, well-structured, velvety body.
