The Champ Persin Champagne from Francois Moutard is a dry Champagne with good weight and citrus notes through to a lingering finish. This single vineyard Chardonnay Champagne is a delight when served lightly chilled with lightly salted starters, salads and risotto yet and is also superb to drink on it's own or as an aperitif.
The Moutards have been making wine since 1642. Francois Moutard's 21-hectare vineyard is situated in Buxeuil at the extreme south east of Champagne on the Cote des Bar, the highest region in Champagne. Pinot Noir thrives particularly well on the clay and limestone soils. Francois is one of the few growers who still grow the Arbane grape; as he also grows the Petit Meslier, he is one of the very few vignerons who can produce a Champagne - 6 Cepages – which is made up of the six allowable grape varieties: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane.
The wine did not undergo malolactic fermentation. Aged for a minimum of three and half years
10 – 20 year old vines. Vines are pruned during the first fortnight of March using the Chablis method. Vineyards are then ploughed and fertilised during the winter months. Hand harvested.
100% single vineyard Chardonnay and no malo-lactic fermentation resulting in a dry Champagne with good weight and citrus notes through to a lingering finish.
