The Bonsai Shiraz Cabernet from Berton Vineyards is an intense, opulent and full flavoured Shiraz blend with dark fruit and vanilla chocolate notes and soft, juicy tannins. It is delightful when served with a big juicy steak or with full flavoured cheeses or mushroom wellington. If you like your vegan red wines big and bold then this is a wonderful wine to enjoy on it's own, you can sit back and while away the hours as you watch this wine develop in character.

Winery Information:
Established by Bob & Cherie Berton in May 1996 with 75 acres of land at 450m above sea level on gently rolling hills in a sub-region of Eden Valley in South Australia. The superb Reserve Shiraz and Reserve Chardonnay wines are still sourced from this plot. In 2007 Bob purchased the Yenda winery in the heart of the Riverina. This state of the art facility has the capacity to process 10,000 tonnes, and allows Berton Vineyards to produce value for money wines which sit alongside his premium single vineyard offerings.

Viticulture:
Vines are planted 1.5m apart with 3.3m between the rows. The trellising system is a single wire trellis which ensures good ventilation and minimal disease. The canopy is typically quite sparse allowing maximum sunlight penetration. Vines are spur pruned.

Soil:
Podsolics - old grey soil over yellow clay. Sandy, slightly sodic.

Vinification: 

The Shiraz and Cabernet grapes were picked, crushed, partially fermented and pressed. The wine was fermented in stainless steel, followed by a malolactic fermentation. The individual parcels of fruit were then transferred to barrels for approximately 24 months. New and old oak was used, mostly French, with a portion of American oak. The wine from the best barrels was carefully selected, blended and prepared for bottling.

Tasting Note:

This intense, rich and full flavoured Shiraz blend with well integrated oak, shows lovely plum fruit, coffee, chocolate and white pepper on the palate. The flavours are supported by juicy soft tannins to create a beautiful layering of texture and taste, that continues to a long lingering finish.
